Casarecce pasta is a short, twisted tube open along its length. It has a brilliant groove for holding the sauce and is a firm favourite with kids in Italy. Use it with lighter tomato or cream based sauces.

Cooking instructions: In a large frying pan, sauté the diced zucchini with garlic, oil, chopped parsley and a pinch of salt; add the boiled pasta al dente, 2 ladles of the cooking water, the grated ricotta fillets and stir everything well. Serve the pasta hot.
