One of our best selling pasta, Trofie (Trophies) from Liguria have a lovely shape and unique texture. Trofie is the classic pasta used for traditional Pesto Genovese.

This is an artisan quality pasta which has been bronze drawn and dried at low temperature.

Weight: 500g

Cooking instructions: Boil a pot of water and then pour the peeled and chopped potatoes and the green beans into small pieces. After a few minutes pour the trofie and cook everything. Apart from preparing the Genoese pesto by putting in a mortar the garlic with the pinch of salt and beat well. Add the basil leaves while continuing to grind. Add the pine nuts and slowly the oil. When everything is well amalgamated and reduced in a green sauce, pour into a sauce pan and dilute with a few tablespoons of water of the cooking of the pasta. A little Parmesan and a little pecorino will complete the sauce. Season the trofie, together with the green beans and potatoes, with the pesto and a sprinkling of grated Parmesan and freshly ground black pepper.
