Orichetti is a type of pasta of pasta from the Puglia region of Southern Italy, it is the modern version of traditional “Strascinati ” The word orecchiette means “little ears” and, without any doubt, the name comes from the shape. The perfect combination is, broccoli raab and anchovies, although it is also very popular with tomato sauce, fresh ricotta and fresh basil
